Ingredients
- 3 packages unflavored gelatin
- 1 cup cold water
- 1½ cups granulated sugar
- 1 cup light corn syrup
- ¼ teaspoon salt
- 1 teaspoon peppermint extract
- ¼ cup crushed candy canes
Directions
- In the bowl of a stand mixer, sprinkle gelatin over ½ cup of the cold water.
- In a small saucepan, combine the remaining ½ cup of water, sugar, corn syrup, and salt. Heat over medium-high heat, stirring occasionally, until the mixture reaches 240°F on a candy thermometer.
- With the mixer on low speed, slowly pour the hot syrup into the gelatin mixture. Gradually increase the speed to high and beat for 12 minutes.
- Add the peppermint extract and beat until combined. Pour the mixture into a greased 9x13-inch pan and spread evenly.
- Sprinkle with crushed candy canes and let sit for at least 4 hours or overnight. Cut into squares and enjoy!
