- 1 pound ground chicken

- 1/4 cup creamy peanut butter
- 2 tablespoons fresh lime juice
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 6 hamburger buns
Directions
- In a large bowl, combine the ground chicken, panko breadcrumbs, cilantro, red onion, garlic, ginger, chili garlic sauce, fish sauce, salt, and pepper. Mix everything together until combined.
- Form the mixture into 6 patties. Heat a large skillet over medium-high heat and add a tablespoon of oil. Working in batches, cook the patties for 5 minutes per side, or until cooked through.
- Meanwhile, in a large bowl, combine the cabbage, carrots, mint, and basil. In a small bowl, whisk together the peanut butter, lime juice, rice vinegar, honey, soy sauce, sesame oil, and garlic. Pour the dressing over the slaw and toss to combine.
- To assemble the burgers, place a patty on each bun and top with a generous scoop of slaw. Serve immediately.
