Ingredients
2 tablespoons butter
1 onion, diced
2 cloves garlic, minced
8 ounces mushrooms, sliced
2 cups cooked, shredded chicken
1 cup frozen mixed vegetables
2 tablespoons all-purpose flour
1 teaspoon dried thyme
Salt and pepper, to taste
2 cups chicken broth
1 cup heavy cream
1/2 teaspoon Worcestershire sauce
1/2 cup shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
1 package refrigerated pie crusts
Directions
Preheat oven to 375 degrees F (190 degrees C).
Melt butter in a large skillet over medium heat. Add onion and garlic, and cook for about 5 minutes, until onion is softened.
Add mushrooms and cook for another 3 minutes. Add chicken, mixed vegetables, flour, thyme, salt, and pepper; cook for 5 minutes, stirring often.
Stir in chicken broth, cream, and Worcestershire sauce. Simmer for 5 minutes, stirring often, until mixture is thickened.
Remove from heat and stir in cheddar and mozzarella cheeses.
Spread chicken mixture into a 9-inch pie dish. Top with one of the pie crusts, pressing to seal.
Cut several slits into the top of the pie. Place pie dish on a baking sheet and bake for 25-30 minutes, until crust is golden brown.
Remove from oven and let cool for 10 minutes before serving.
Interesting Facts
This dish can be served hot or cold.
You can use any type of cooked chicken in this recipe, such as leftover rotisserie chicken or canned chicken.
For a spicier version, add 1/4 teaspoon cayenne pepper to the chicken mixture.
This recipe can be doubled easily to feed a larger crowd.
