Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 cups cooked, shredded chicken
  • 1 cup frozen mixed vegetables
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 package refrigerated pie crusts

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Melt butter in a large skillet over medium heat. Add onion and garlic, and cook for about 5 minutes, until onion is softened.
  3. Add mushrooms and cook for another 3 minutes. Add chicken, mixed vegetables, flour, thyme, salt, and pepper; cook for 5 minutes, stirring often.
  4. Stir in chicken broth, cream, and Worcestershire sauce. Simmer for 5 minutes, stirring often, until mixture is thickened.
  5. Remove from heat and stir in cheddar and mozzarella cheeses.
  6. Spread chicken mixture into a 9-inch pie dish. Top with one of the pie crusts, pressing to seal.
  7. Cut several slits into the top of the pie. Place pie dish on a baking sheet and bake for 25-30 minutes, until crust is golden brown.
  8. Remove from oven and let cool for 10 minutes before serving.
