Ingredients

  • 2 cups of chopped tomatoes
  • 1 cup of chopped mushrooms
  • 1/4 cup of chopped onion
  • 1/4 cup of extra virgin olive oil
  • 1 tablespoon of red wine vinegar
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper to taste

Directions

  1. In a bowl, combine the tomatoes, mushrooms, and onion.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, garlic powder, oregano, and basil.
  3. Pour the dressing over the vegetables and toss to combine.
  4. Season to taste with salt and pepper.
  5. Serve immediately, or chill in the refrigerator until ready to serve.
