Ingredients

  • 1/2 cup vegan cream cheese
  • 1 block of extra firm tofu
  • 1/4 cup vegan white sugar
  • 2 tablespoons cornstarch
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup vegan butter, melted
  • 1 pre-made vegan graham cracker crust

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a food processor, blend together cream cheese, tofu, sugar, cornstarch, lemon juice, and vanilla extract until creamy and smooth.
  3. Pour mixture into prepared graham cracker crust.
  4. Bake in preheated oven for 30 minutes.
  5. Allow to cool before serving.
