Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 pound ground turkey
  • 2 tablespoons all-purpose flour
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup long-grain white rice
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for about 3 minutes.
  2. Add the ground turkey, breaking it up with a spoon, and cook until it's no longer pink, about 5 minutes.
  3. Stir in the flour, Italian seasoning, paprika, salt, and pepper and cook for 1 minute.
  4. Add the chicken broth and diced tomatoes and bring to a boil. Reduce the heat to low and simmer for 15 minutes.
  5. Stir in the rice and cook for 20 minutes, stirring occasionally.
  6. Stir in the cream and Parmesan cheese and cook for 5 minutes.
  7. Serve hot.
