Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup vegetable broth
- 1/2 cup uncooked bow-tie pasta
- 1/2 cup frozen peas
- 1/4 cup grated Parmesan cheese
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, bell peppers, mushrooms, garlic, Italian seasoning, salt and black pepper and cook for 5 minutes, stirring occasionally.
- Add the vegetable broth and bring to a boil.
- Add the bow-tie pasta and cook for 8-10 minutes, or until the pasta is al dente.
- Stir in the frozen peas and cook for an additional 2 minutes.
- Stir in the Parmesan cheese and serve.
