Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegetable broth
  • 1/2 cup uncooked bow-tie pasta
  • 1/2 cup frozen peas
  • 1/4 cup grated Parmesan cheese

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, bell peppers, mushrooms, garlic, Italian seasoning, salt and black pepper and cook for 5 minutes, stirring occasionally.
  3. Add the vegetable broth and bring to a boil.
  4. Add the bow-tie pasta and cook for 8-10 minutes, or until the pasta is al dente.
  5. Stir in the frozen peas and cook for an additional 2 minutes.
  6. Stir in the Parmesan cheese and serve.
