Ingredients
1 tablespoon olive oil
1 onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup mushrooms, sliced
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup vegetable broth
1/2 cup uncooked bow-tie pasta
1/2 cup frozen peas

Directions
Heat the olive oil in a large skillet over medium heat.
Add the onion, bell peppers, mushrooms, garlic, Italian seasoning, salt and black pepper and cook for 5 minutes, stirring occasionally.
Add the vegetable broth and bring to a boil.
Add the bow-tie pasta and cook for 8-10 minutes, or until the pasta is al dente.
Stir in the frozen peas and cook for an additional 2 minutes.
Stir in the Parmesan cheese and serve.
