Ingredients
2 large zucchini, cut into 1/2-inch thick slices
2 tablespoons extra-virgin olive oil
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 cup freshly grated Parmesan cheese
Directions
Preheat the oven to 375°F (190°C).
Spread the zucchini slices in an even layer on a baking sheet.
Drizzle with the olive oil and season with the salt, pepper, thyme, oregano, and garlic powder. Toss to coat.
Bake for 20 minutes, until the zucchini is tender and golden brown.
Remove from the oven and sprinkle with the Parmesan cheese. Return to the oven for 5 more minutes, until the cheese is melted and bubbly.
Serve warm.
