Ingredients
- 2 large zucchini, cut into 1/2-inch thick slices
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 cup freshly grated Parmesan cheese
Directions
- Preheat the oven to 375°F (190°C).
- Spread the zucchini slices in an even layer on a baking sheet.
- Drizzle with the olive oil and season with the salt, pepper, thyme, oregano, and garlic powder. Toss to coat.
- Bake for 20 minutes, until the zucchini is tender and golden brown.
- Remove from the oven and sprinkle with the Parmesan cheese. Return to the oven for 5 more minutes, until the cheese is melted and bubbly.
- Serve warm.
