Ingredients
- 2 lbs mahi mahi fillet
- 3/4 cup coconut milk
- 1/4 cup lime juice
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon cayenne pepper
- 1 teaspoon ground coriander
- 1 teaspoon sea salt
- 2 tablespoons olive oil
Directions
- In a medium bowl, combine the coconut milk, lime juice, garlic, ginger, cayenne pepper, coriander, and sea salt.
- Add the mahi mahi fillets to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes or up to 1 hour.
- Heat a grill or grill pan to medium-high heat. Lightly grease the grill with oil.
- Grill the mahi mahi for 3 to 4 minutes per side, or until cooked through.
- Serve the mahi mahi with the remaining marinade and enjoy!
