Directions
Preheat oven to 400°F.
In a small bowl, mix together the ground coffee, smoked paprika, garlic powder, salt, and black pepper.
Rub the mixture onto the steaks, making sure to coat both sides evenly.
Heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot, add the steaks to the skillet and cook for 2-3 minutes per side, or until cooked to desired doneness.
Remove the steaks from the skillet and set aside.
In the same skillet, add the vegetables and cook for 5-7 minutes, or until they are softened and lightly browned.
Transfer the vegetables to a baking sheet and place in the preheated oven for 10-15 minutes, or until vegetables are cooked through.
Serve the steaks with the roasted vegetables.
