Tequila Slow-Cooked Beef Enchiladas

Ingredients

  • 1 ½ pounds beef roast
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ¼ cup tequila
  • 1 (15 oz) can tomato sauce
  • 1 (4 oz) can chopped green chilies
  • 12 (6-inch) flour tortillas
  • 2 cups shredded cheddar cheese
  • Sour cream, for garnish
  • Chopped cilantro, for garnish

Directions

  1. Cut the beef into 1-inch cubes. Place the beef in a slow cooker with the onion, bell pepper, garlic, cumin, chili powder, tequila, tomato sauce, and green chilies. Stir to combine.
  2. Cook on low heat for 6 to 8 hours, or until the beef is tender.
  3. Preheat oven to 350°F.
  4. Spray a 9x13-inch baking dish with nonstick cooking spray.
  5. Warm the tortillas in a microwave for about 30 seconds, or until pliable.
  6. Place about ½ cup of the beef mixture in the center of each tortilla. Roll up and place in the baking dish, seam-side down.
  7. Pour any remaining beef mixture over the enchiladas and sprinkle with the cheese.
  8. Bake for 20 to 25 minutes, until the cheese is melted and bubbly.
  9. Garnish with sour cream and cilantro, if desired.
