Ingredients
- 1 ½ pounds beef roast
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ¼ cup tequila
- 1 (15 oz) can tomato sauce
- 1 (4 oz) can chopped green chilies
- 12 (6-inch) flour tortillas
- 2 cups shredded cheddar cheese
- Sour cream, for garnish
- Chopped cilantro, for garnish
Directions
- Cut the beef into 1-inch cubes. Place the beef in a slow cooker with the onion, bell pepper, garlic, cumin, chili powder, tequila, tomato sauce, and green chilies. Stir to combine.
- Cook on low heat for 6 to 8 hours, or until the beef is tender.
- Preheat oven to 350°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray.
- Warm the tortillas in a microwave for about 30 seconds, or until pliable.
- Place about ½ cup of the beef mixture in the center of each tortilla. Roll up and place in the baking dish, seam-side down.
- Pour any remaining beef mixture over the enchiladas and sprinkle with the cheese.
- Bake for 20 to 25 minutes, until the cheese is melted and bubbly.
- Garnish with sour cream and cilantro, if desired.
