Ingredients
- 1 package Udon noodles
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups cooked chicken, cubed
- 4 cups chicken broth
- 1 teaspoon soy sauce

- 2 tablespoons sesame oil
- 2 tablespoons fresh cilantro, chopped for garnish
Directions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
- Add the chicken, chicken broth, soy sauce, and mirin to the pot and bring to a boil.
- Add the Udon noodles and cook for 5 minutes, or until the noodles are tender.
- Remove the pot from the heat and stir in the sesame oil.
- Ladle the soup into bowls and garnish with the chopped cilantro.
