Ingredients

  • 2 pounds boneless pork shoulder, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 2 cans diced tomatoes
  • 1 can green chilies, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the pork cubes and cook until lightly browned, about 10 minutes.
  2. Add the onion and garlic and cook for an additional 5 minutes.
  3. Add the tomatoes, chilies, cumin, oregano, cilantro, salt, and pepper. Stir to combine.
  4. Cover and simmer for 25 minutes, stirring occasionally.
  5. Serve with warm flour tortillas.
