Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)

Directions

  1. Preheat oven to 350°F (176°C).
  2. In a medium bowl, whisk together flour, cornmeal, baking powder, baking soda and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. Beat in egg and vanilla extract until well combined.
  5. Gradually add in the dry ingredients and mix until just combined.
  6. Stir in the chopped nuts, if using.
  7. Drop dough by spoonfuls onto a parchment-lined baking sheet.
  8. Bake for 10-12 minutes or until cookies are golden brown.
  9. Allow to cool before serving.
