- 1 cup all-purpose flour

Directions
- Preheat oven to 350°F (176°C).
- In a medium bowl, whisk together flour, cornmeal, baking powder, baking soda and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- Gradually add in the dry ingredients and mix until just combined.
- Stir in the chopped nuts, if using.
- Drop dough by spoonfuls onto a parchment-lined baking sheet.
- Bake for 10-12 minutes or until cookies are golden brown.
- Allow to cool before serving.
