Ingredients
- 2 pounds beef round steak, tenderized and cut into serving-sized pieces
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 can (14 ounces) diced tomatoes, undrained
- 1 can (8 ounces) tomato sauce
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
Directions
- In a shallow dish, mix together the flour, salt, black pepper, and paprika. Dredge each piece of steak in the flour mixture, coating both sides.
- Turn on the Instant Pot and select the Saute function. Heat the vegetable oil in the pot.
- Working in batches, brown the steak on both sides in the hot oil. Remove the steak from the pot and set aside.
- Add the sliced onion to the pot and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute.
- Pour in the diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, dried thyme, and add the bay leaf. Stir to combine.
- Return the seared steak to the pot, nestling the pieces into the sauce.
- Close the Instant Pot lid, making sure the pressure valve is set to the sealing position. Select the Manual/Pressure Cook function and set the cooking time for 25 minutes on high pressure.
- Once the cooking time is complete, allow the pressure to release naturally for 10 minutes. Then carefully perform a quick release to release any remaining pressure.
- Open the lid and remove the bay leaf. Serve the Swiss steak with the sauce spooned over the top, along with mashed potatoes or rice.
