Ingredients

  • 6 large baking potatoes
  • 1 cup diced onions
  • 6 slices bacon

Directions

  7. Add the chopped potatoes to the pot with onions and garlic. Stir well to combine.
  8. Pour in the chicken broth, milk, and heavy cream. Season with salt and pepper to taste.
  9. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 15-20 minutes, allowing the flavors to meld together.
  10. Using an immersion blender or working in batches in a regular blender, puree the soup until smooth and creamy.
  11. Return the soup to the pot and heat it over low heat.
