These Island Jump-Up Ribs are a tantalizing blend of sweet and savory flavors that will have your taste buds dancing. The ribs are marinated in a tropical spice rub, then slow-roasted until tender and juicy. Perfect for a summer barbecue or a taste of the Caribbean any time of year.

Ingredients

  • 3 lbs baby back ribs
  • 1/4 cup brown sugar
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 jalapeno, minced (optional)

Directions

  1. In a small bowl, mix together brown sugar, chili powder, paprika, garlic powder, onion powder, cumin, cinnamon, allspice, salt, and black pepper.
  2. Rub the spice mixture all over the ribs, covering them evenly. Place ribs in a large resealable plastic bag or container.
  3. In a separate bowl, whisk together pineapple juice, soy sauce, lime juice, garlic, and jalapeno. Pour over the ribs, seal the bag or container, and refrigerate for at least 2 hours, or overnight for best flavor.
  4. Preheat oven to 300°F. Remove ribs from marinade and place on a rimmed baking sheet lined with foil. Bake for 2-2.5 hours, or until ribs are tender, basting occasionally with marinade.
  5. For a charred finish, heat grill to medium-high heat. Grill ribs for 5-10 minutes per side, brushing with additional marinade.
  6. Slice ribs between the bones and serve hot. Enjoy the tropical flavors of these Island Jump-Up Ribs!
