Ingredients
- 4 lamb shanks
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup red wine
- 2 cups beef broth
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme

Directions
- Preheat the oven to 325°F.
- Season the lamb shanks with salt and pepper.
- In a large dutch oven, heat olive oil over medium-high heat.
- Brown the lamb shanks on all sides, about 5 minutes per side.
- Remove the lamb shanks and set aside.
- Add the onion, carrots, celery, and garlic to the dutch oven and cook until softened.
- Pour in the red wine and beef broth, scraping up any browned bits from the bottom of the pot.
- Return the lamb shanks to the pot and add the rosemary and thyme.
- Cover the pot and place it in the preheated oven.

- Remove the lamb shanks from the pot and keep warm.
- Strain the cooking liquid and return it to the pot.
- Simmer the sauce over medium heat until it has reduced and thickened.
