Ingredients

  • 4 lamb shanks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 325°F.
  2. Season the lamb shanks with salt and pepper.
  3. In a large dutch oven, heat olive oil over medium-high heat.
  4. Brown the lamb shanks on all sides, about 5 minutes per side.
  5. Remove the lamb shanks and set aside.
  6. Add the onion, carrots, celery, and garlic to the dutch oven and cook until softened.
  7. Pour in the red wine and beef broth, scraping up any browned bits from the bottom of the pot.
  8. Return the lamb shanks to the pot and add the rosemary and thyme.
  9. Cover the pot and place it in the preheated oven.
  10. Braise the lamb shanks for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
  11. Remove the lamb shanks from the pot and keep warm.
  12. Strain the cooking liquid and return it to the pot.
  13. Simmer the sauce over medium heat until it has reduced and thickened.
  14. Season the sauce with salt and pepper to taste.
  15. Serve the lamb shanks with the red wine sauce and enjoy!
