Ingredients

  • 2 medium sweet potatoes
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese

  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • Vegetable oil, for frying

Directions

  1. Preheat the oven to 400°F (200°C). Pierce the sweet potatoes several times with a fork and place them on a baking sheet. Bake for 45-60 minutes, or until they are soft and tender. Remove from the oven and let cool.
  2. Once the sweet potatoes are cool enough to handle, peel off the skin and transfer the flesh to a mixing bowl. Mash the sweet potatoes until smooth.
  3. Add the bread crumbs, Parmesan cheese, chopped sage, garlic powder, salt, and black pepper to the mashed sweet potatoes. Mix well to combine.
  4. Shape the mixture into small balls, about 1 inch in diameter.
  5. Place the flour, beaten eggs, and bread crumbs in three separate shallow bowls. Roll each ball in the flour, then dip it into the beaten eggs, and finally coat it with bread crumbs.
  6. Heat vegetable oil in a deep pot or skillet over medium-high heat. Carefully add the sweet potato balls and fry them until golden brown and crispy, about 2-3 minutes per side. Remove from the oil and drain on a paper towel-lined plate.
  7. Serve the sweet potato sage balls hot, either on their own or with a dipping sauce of your choice.
