Ingredients
- 1 cup mashed sweet potatoes
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3 eggs
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 cup chopped pineapple
- 1/4 cup chopped walnuts (optional)
Directions
- Preheat oven to 350°F. Grease an 8-inch loaf pan and set aside.
- In a large bowl, combine the mashed sweet potatoes, almond flour, coconut flour, baking powder, baking soda, salt and cinnamon. Stir until well mixed.
- In a separate bowl, whisk together the eggs, maple syrup, coconut oil and vanilla extract until combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the pineapple and walnuts, if using.
- Pour the batter into the prepared loaf pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for 10 minutes before removing from the pan. Slice and serve.
