Ingredients
- 3 medium beets, peeled and chopped
- 2 potatoes, peeled and diced
- 1 onion, chopped
- 3 carrots, peeled and diced
- 1/4 cup vegetable oil
- 3 cloves garlic, minced
- 5 cups vegetable broth
- 1/4 cup fresh dill, chopped
- Salt and pepper, to taste
Directions
- In a large pot, heat the vegetable oil over medium heat. Once the oil is hot, add the onion and garlic and sauté until the onion is translucent, about 3 minutes.
- Add the beets, potatoes, and carrots to the pot and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low and simmer, covered, for 20-25 minutes or until the vegetables are tender.
- Stir in the chopped dill and season with salt and pepper to taste.
- Serve hot with your favorite crusty bread or crackers.
