In a large pot, heat the vegetable oil over medium heat. Once the oil is hot, add the onion and garlic and sauté until the onion is translucent, about 3 minutes.
Add the beets, potatoes, and carrots to the pot and cook for 5 minutes, stirring occasionally.
Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low and simmer, covered, for 20-25 minutes or until the vegetables are tender.
Stir in the chopped dill and season with salt and pepper to taste.
Serve hot with your favorite crusty bread or crackers.
