Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon

- 1/2 cup milk
- 1/4 cup butter, melted
- 1/2 cup mashed sweet potato
- 1 egg
- 2 tablespoons white sugar
Directions
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a separate bowl, stir together the milk, melted butter, mashed sweet potato, egg, and sugar. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Heat a large skillet over medium-high heat. Grease the skillet with butter or cooking spray. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook each pancake until golden brown, about 2 minutes per side.
- Serve with your favorite toppings such as butter, syrup, or honey.
