Ingredients
1/2 pound baby eggplant
1/2 pound tomatoes
1/2 pound zucchini
1/4 cup olive oil
3 cloves garlic, minced
Salt and pepper, to taste
Directions
Preheat oven to 400 degrees F.
Cut eggplant, tomatoes and zucchini into bite-sized pieces.
In a large bowl, combine olive oil, garlic, salt and pepper. Add cut vegetables to the bowl and toss to coat.
Spread vegetables on a large baking sheet in a single layer.
Roast for 25-30 minutes, or until vegetables are tender and lightly browned.
Serve warm.
