Ingredients
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts
- 1/2 cup diced pineapple
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tablespoons fresh lime juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground ginger
- Salt and pepper, to taste
Directions
- Preheat oven to 425 degrees F.
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt and pepper and add to the skillet. Cook until golden brown and cooked through, about 5-7 minutes per side.
- In a small bowl, whisk together pineapple, honey, soy sauce, lime juice, garlic powder, onion powder, and ground ginger.
- Pour sauce over chicken and bring to a simmer. Simmer for 5 minutes, stirring occasionally.
- Transfer chicken to a baking dish and top with remaining sauce. Bake in preheated oven for 15 minutes, or until sauce is bubbly and chicken is cooked through.
- Serve warm with additional sauce, if desired.
