Ingredients

  • 3 large sweet potatoes, peeled and diced
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/2 cup oats
  • 1/4 cup chopped walnuts
  • 1 tablespoon olive oil
  • 2 tablespoons maple syrup

Directions

  1. Preheat oven to 425 degrees F (220 degrees C). Grease a 9-inch baking dish.
  2. In a large bowl, toss together sweet potatoes, 1 teaspoon olive oil, salt, black pepper, garlic powder and paprika. Transfer sweet potatoes to the prepared baking dish.
  3. In the same bowl, combine oats, walnuts, 1 tablespoon olive oil and maple syrup. Mix until ingredients are evenly distributed. Sprinkle the oat mixture over the sweet potatoes.
  4. Bake in preheated oven for 25-30 minutes until potatoes are tender and topping is golden brown.
