Preheat oven to 425 degrees F (220 degrees C). Grease a 9-inch baking dish.
In a large bowl, toss together sweet potatoes, 1 teaspoon olive oil, salt, black pepper, garlic powder and paprika. Transfer sweet potatoes to the prepared baking dish.
In the same bowl, combine oats, walnuts, 1 tablespoon olive oil and maple syrup. Mix until ingredients are evenly distributed. Sprinkle the oat mixture over the sweet potatoes.
Bake in preheated oven for 25-30 minutes until potatoes are tender and topping is golden brown.
