Mushroom Spinach and Cheese Torta

Ingredients

  • 1 sheet of puff pastry
  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 1 clove of garlic, minced
  • 1 cup of mushrooms, sliced
  • 1/2 teaspoon of dried oregano
  • 1/2 teaspoon of dried thyme
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of freshly ground black pepper
  • 3 cups of fresh spinach, chopped
  • 1 cup of shredded mozzarella cheese
  • 1/4 cup of freshly grated Parmesan cheese
  • 1 egg, lightly beaten

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  2. Unfold the puff pastry and place on the prepared baking sheet. Score a 1-inch border around the edge of the puff pastry.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the mushrooms, oregano, thyme, salt and pepper and cook until the mushrooms are softened, about 5 minutes.
  4. Add the spinach and cook until wilted, about 3 minutes. Remove from heat and set aside.
  5. Spread the mushroom-spinach mixture on the puff pastry within the 1-inch border. Sprinkle the mozzarella and Parmesan cheese over the top.
  6. Brush the egg around the 1-inch border of the puff pastry. Bake in preheated oven for 25 minutes, or until the pastry is golden brown.
  7. Let cool for 10 minutes before slicing and serving.
