Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, diced
  • 1 cup long grain rice
  • 1 can (10 3/4 ounce) condensed cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • 1 cup frozen mixed vegetables

Directions

  1. Preheat oven to 350 degrees F.
  2. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the chicken and cook for 1 minute. Add the rice and cook for 1 minute more.
  4. Add the soup, broth, oregano, basil, thyme, and pepper to the skillet and stir to combine.
  5. Pour the mixture into a 9x13-inch baking dish. Stir in the frozen vegetables.
  6. Bake for 30 minutes, or until the casserole is hot and bubbly.
