Ingredients

  • 2 potatoes, peeled and cubed
  • 1/4 cup mayonnaise
  • 1/4 cup aji amarillo sauce
  • 1 avocado, sliced
  • 2 hard-boiled eggs, sliced
  • 1/4 cup sliced olives
  • Salt and pepper, to taste

Directions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the potatoes and cook for 15 minutes, or until tender.
  3. Drain the potatoes and return them to the pot.
  4. Mash the potatoes with a potato masher or fork.
  5. Mix in the mayonnaise and aji amarillo sauce.
  6. Transfer the mashed potatoes to a serving platter.
  7. Top with the avocado, eggs, and olives.
  8. Season with salt and pepper, to taste.
  9. Serve immediately.
