Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups mashed cooked beets
  • 1/2 cup buttermilk

Directions

  1. Preheat oven to 350°F. Grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. Mix in the mashed beets and then the buttermilk.
  6. Stir the dry ingredients into the wet ingredients until just combined.
  7. Pour the batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
