Ingredients
- 2 tablespoons butter
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 large sweet potatoes, peeled and diced
- 4 cups vegetable broth
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground black pepper
- 1/2 cup heavy cream
- Salt to taste
Directions
- Heat the butter in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the sweet potatoes, vegetable broth, thyme, and black pepper. Bring to a boil, reduce heat and simmer for 20 minutes or until the sweet potatoes are tender.
- Transfer the soup to a blender or food processor and puree until smooth. Return the soup to the pot and stir in the cream.
- Taste and season with salt if needed. Serve hot.
