Directions
Put the azuki beans in a bowl and rinse them with cold water.
Put the beans in a pot and add the water. Bring the mixture to a boil.
Once the mixture has come to a boil, reduce the heat and simmer for 15 minutes.
Strain the beans and set aside the cooking water.
Put the beans in a food processor or blender and add 1/2 cup of the cooking water.

Bring the mixture to a boil and reduce the heat. Simmer for 10 minutes, stirring occasionally.
Once the paste is thick and glossy, remove it from the heat and let it cool.
