- 2 sweet potatoes, peeled and diced

Directions
- Preheat oven to 400 degrees F (200 degrees C).
- Spread sweet potatoes on a baking sheet and drizzle with olive oil. Roast in the preheated oven for 20 minutes, stirring halfway through.
- In a large bowl, combine roasted sweet potatoes and diced orange. Drizzle with lemon juice and season with salt and pepper.
