Ingredients

  • 1 large sweet potato, cut into cubes
  • 1 large carrot, cut into cubes
  • 1 onion, cut into cubes
  • 1 red pepper, cut into cubes

  • Salt and pepper, to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Directions

  1. Preheat the oven to 375 degrees F.
  2. In a large bowl, combine the sweet potato, carrot, onion, red pepper, garlic, olive oil, salt, pepper, thyme, and oregano. Mix until everything is evenly coated.
  3. Spread the vegetables onto a baking sheet and bake for 45 minutes, or until the vegetables are tender and golden brown.
