Ingredients
- 1 tablespoon oil
- 1/2 teaspoon cumin seeds
- 2 cloves garlic, minced
- 1/2 teaspoon grated ginger
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1 (14.5 oz.) can diced tomatoes
- 1 (15 oz.) can chickpeas, drained and rinsed
- 1/4 teaspoon salt
Directions
- Heat oil in a large skillet over medium heat. Add cumin seeds and cook, stirring, for 30 seconds.
- Add garlic, ginger, turmeric, cumin, and cayenne pepper. Cook, stirring constantly, for 1 minute.
- Add diced tomatoes and stir to combine. Simmer for 5 minutes.
- Stir in chickpeas and salt. Simmer for 5 minutes, stirring occasionally.
- Serve over cooked rice.
