Ingredients

  • 1 tablespoon oil
  • 1/2 teaspoon cumin seeds
  • 2 cloves garlic, minced
  • 1/2 teaspoon grated ginger
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 (14.5 oz.) can diced tomatoes
  • 1 (15 oz.) can chickpeas, drained and rinsed
  • 1/4 teaspoon salt

Directions

  1. Heat oil in a large skillet over medium heat. Add cumin seeds and cook, stirring, for 30 seconds.
  2. Add garlic, ginger, turmeric, cumin, and cayenne pepper. Cook, stirring constantly, for 1 minute.
  3. Add diced tomatoes and stir to combine. Simmer for 5 minutes.
  4. Stir in chickpeas and salt. Simmer for 5 minutes, stirring occasionally.
  5. Serve over cooked rice.
