  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 1 cup cooked and mashed sweet potato
  • 1/2 cup coconut flakes
  • 1/2 cup milk
  • 1/4 cup honey
  • 1 large egg


  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together the flours, baking powder, baking soda, and salt.
  3. In a large bowl, mix together the butter, sweet potato, coconut flakes, milk, honey, and egg until combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Grease a 9-inch loaf pan and pour the batter into the pan.
  6. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool for 10 minutes before removing from the pan and cooling completely on a wire rack.
