Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 large potatoes, peeled and diced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 6 large eggs, beaten
  • 1/4 cup chopped parsley

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and cook, stirring occasionally, until softened, about 5 minutes.
  3. Add the potatoes, paprika, oregano, and salt and cook, stirring occasionally, until the potatoes are tender, about 10 minutes.
  4. Pour the eggs over the potato mixture and stir to combine.
  5. Reduce the heat to low and cook, stirring occasionally, until the eggs are set, about 10 minutes.
  6. Garnish with the parsley and serve.
