Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 large potatoes, peeled and diced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 6 large eggs, beaten
- 1/4 cup chopped parsley
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion and garlic and cook, stirring occasionally, until softened, about 5 minutes.
- Add the potatoes, paprika, oregano, and salt and cook, stirring occasionally, until the potatoes are tender, about 10 minutes.
- Pour the eggs over the potato mixture and stir to combine.
- Reduce the heat to low and cook, stirring occasionally, until the eggs are set, about 10 minutes.
- Garnish with the parsley and serve.
