Ingredients

  • 1 package refrigerated pie crust
  • 1 package cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 eggs
  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup honey

Directions

  1. Preheat oven to 350°F (175°C).
  2. Unroll the pie crust and press it into a 9-inch (23 cm) pie plate. Set aside.
  3. In a large bowl, beat the cream cheese, 1/2 cup sugar, vanilla extract, and 1/4 teaspoon cinnamon with an electric mixer until smooth.
  4. Add the eggs one at a time, beating after each addition until well combined.
  5. Pour the cream cheese mixture into the prepared pie crust.
  6. Bake for 25 minutes, or until the center is set. Allow to cool completely.
  7. Meanwhile, in a small bowl, mix together the melted butter, 1/4 cup sugar, 1 teaspoon cinnamon, and honey.
  8. Cut the sopapilla dough into strips and deep-fry until golden brown. Drain on paper towels.
  9. Top the cooled cheesecake with the fried sopapillas and drizzle the honey mixture over the top.
  10. Refrigerate for at least 2 hours before serving.
