- 1 package refrigerated pie crust
- 1 package cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 2 eggs
- 1/2 cup melted butter
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
- 1/4 cup honey
Directions
- Preheat oven to 350°F (175°C).
- Unroll the pie crust and press it into a 9-inch (23 cm) pie plate. Set aside.
- In a large bowl, beat the cream cheese, 1/2 cup sugar, vanilla extract, and 1/4 teaspoon cinnamon with an electric mixer until smooth.
- Add the eggs one at a time, beating after each addition until well combined.
- Pour the cream cheese mixture into the prepared pie crust.
- Bake for 25 minutes, or until the center is set. Allow to cool completely.
- Meanwhile, in a small bowl, mix together the melted butter, 1/4 cup sugar, 1 teaspoon cinnamon, and honey.
- Cut the sopapilla dough into strips and deep-fry until golden brown. Drain on paper towels.
- Top the cooled cheesecake with the fried sopapillas and drizzle the honey mixture over the top.
- Refrigerate for at least 2 hours before serving.
