Ingredients
- 4 slices of French bread
- 4 ounces of roast beef
- 2 tablespoons of butter
- 1 shallot, thinly sliced
- 2 tablespoons of balsamic vinegar
- 3 ounces of Roquefort cheese
- Salt and pepper to taste
Directions
- Preheat a non-stick skillet over medium heat.
- Add the butter and shallots to the skillet and cook for 2-3 minutes, stirring often, until the shallots are golden brown.
- Add the balsamic vinegar and cook for an additional minute until the vinegar has reduced slightly.
- Toast the French bread in a toaster or under the broiler for 1-2 minutes.
- Lay the slices of bread on a cutting board and top each with roast beef, caramelized shallots, and Roquefort cheese.
- Season with salt and pepper to taste.
- Place the second slice of bread on top and press down lightly.
- Place the panini in the skillet and cook for 2-3 minutes per side, or until the cheese is melted and the bread is golden brown.
- Remove from heat and slice in half before serving.
