Ingredients

  • 4 slices of French bread
  • 4 ounces of roast beef
  • 2 tablespoons of butter
  • 1 shallot, thinly sliced
  • 2 tablespoons of balsamic vinegar
  • 3 ounces of Roquefort cheese
  • Salt and pepper to taste

Directions

  1. Preheat a non-stick skillet over medium heat.
  2. Add the butter and shallots to the skillet and cook for 2-3 minutes, stirring often, until the shallots are golden brown.
  3. Add the balsamic vinegar and cook for an additional minute until the vinegar has reduced slightly.
  4. Toast the French bread in a toaster or under the broiler for 1-2 minutes.
  5. Lay the slices of bread on a cutting board and top each with roast beef, caramelized shallots, and Roquefort cheese.
  6. Season with salt and pepper to taste.
  7. Place the second slice of bread on top and press down lightly.
  8. Place the panini in the skillet and cook for 2-3 minutes per side, or until the cheese is melted and the bread is golden brown.
  9. Remove from heat and slice in half before serving.
