Ingredients

  • 2 cups carrots, finely grated
  • 2 cups celery, finely chopped
  • 1 cup pecans, chopped
  • 1 package (3 ounces) sugar-free orange Jell-O
  • 1 cup boiling water
  • 1/2 cup cold water

Directions

  1. In a medium bowl, combine carrots, celery, and pecans. Mix together until ingredients are evenly distributed.
  2. In a separate bowl, combine the Jell-O powder and boiling water. Stir until the Jell-O powder is dissolved.
  3. Add the cold water to the Jell-O mixture and stir until combined.
  4. Pour the Jell-O mixture over the carrot-celery-pecan mixture and stir until all ingredients are evenly distributed.
  5. Transfer the salad to a serving bowl and refrigerate until ready to serve.
