Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 medium zucchini, cut into 1/2-inch cubes
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- Salt and pepper, to taste
- 1 tablespoon freshly chopped parsley
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook, stirring regularly, until the onion is softened and lightly browned, about 5 minutes.
- Add the zucchini and cook, stirring occasionally, until the zucchini is just tender, about 5 minutes.
- Stir in the oregano, basil, salt, and pepper and cook for 1 minute.
- Remove the skillet from the heat and stir in the parsley.
