Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchini, cut into 1/2-inch cubes
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 tablespoon freshly chopped parsley

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook, stirring regularly, until the onion is softened and lightly browned, about 5 minutes.
  3. Add the zucchini and cook, stirring occasionally, until the zucchini is just tender, about 5 minutes.
  4. Stir in the oregano, basil, salt, and pepper and cook for 1 minute.
  5. Remove the skillet from the heat and stir in the parsley.
