Ingredients

  • 2 tablespoons vegetable oil
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 2 cups vegetable broth
  • 3 cups cooked rice noodles
  • 1/2 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Heat the vegetable oil in a large pot over medium-high heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the ginger, bell pepper, and carrot and cook for 3 minutes.
  4. Add the broth and bring to a boil.
  5. Stir in the cooked noodles and peas and cook for 3 minutes.
  6. Stir in the soy sauce and sesame oil and cook for 1 minute.
  7. Garnish with cilantro and serve.
