Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup melted butter
  • 1 cup mashed butternut squash
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • ¼ cup milk
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, mix together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat together the melted butter, mashed butternut squash, sugar, and vanilla extract until smooth.
  4. Add the eggs, one at a time, beating until combined.
  5. Stir in the milk.
  6. Slowly add the flour mixture, stirring until just combined.
  7. Stir in the cinnamon and nutmeg.
  8. Spoon the batter into a lined or greased muffin tin, filling each cup about ¾ full.
  9. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before serving.
