Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 cup canned pumpkin puree
  • 3/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking soda, baking powder, cinnamon, ginger and nutmeg. In a separate bowl, mix together the pumpkin, oil, eggs and vanilla. Add to the dry ingredients, stirring just until blended. Fold in the chocolate chips.
  3. Fill muffin cups about 2/3 full. Bake for 20 to 25 minutes in the preheated oven, or until a toothpick inserted into the center of a muffin comes out clean.
  4. Allow to cool for a few minutes before removing from the pan.
