Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup plain Greek yogurt
  • 1 cup peeled, diced mango
  • 1/2 cup fresh blueberries
  • 1/4 cup sweetened shredded coconut
  • 1/4 cup packed light brown sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons melted butter

Directions

  1. Preheat oven to 375°F. Grease a 12-cup muffin tin and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, whisk together the sugar, oil, egg, and vanilla until well combined. Add the yogurt and whisk until smooth.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not over mix. Gently fold in the mango and blueberries.
  5. Divide the batter between the 12 muffin cups, filling each cup about 3/4 full. Set aside.
  6. In a small bowl, mix together the coconut, brown sugar, flour, and melted butter until combined. Sprinkle the streusel over the muffins.
  7. Bake the muffins for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
