Ingredients

  • 6 cups thinly sliced cucumbers
  • 2 cups thinly sliced onions
  • 1/4 cup salt
  • 2 cups white sugar
  • 1 cup apple cider vinegar
  • 1/2 cup white vinegar
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds
  • 1/2 teaspoon turmeric

Directions

  1. In a large bowl, combine the sliced cucumbers, onions, and salt. Let sit for 2 hours.
  2. Rinse the cucumber and onion mixture thoroughly under cold water and drain well.
  3. In a large pot, combine the white sugar, apple cider vinegar, white vinegar, mustard seeds, celery seeds, and turmeric. Bring to a boil over medium heat.
  4. Add the cucumber and onion mixture to the pot and return to a boil. Remove from heat.
  5. Pack the pickles into sterilized jars, making sure to leave 1/2 inch of headspace at the top.
  6. Seal the jars and refrigerate for at least 24 hours before serving. The pickles will keep in the refrigerator for up to 3 months.
