Ingredients
- 1 pound ground beef
- 1 egg
- 1/2 cup bread crumbs
- 1/4 cup chopped onion
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 2 tablespoons vinegar
- 1/4 cup pineapple juice
- 2 tablespoons cornstarch
Directions
- In a large bowl, combine the ground beef, egg, bread crumbs, onion, salt, and pepper. Mix well.
- Form the mixture into 1-inch meatballs and place on a greased baking sheet.
- Bake in a preheated 350°F oven for 20 minutes, or until cooked through.
- Meanwhile, in a medium saucepan, combine the ketchup, brown sugar, vinegar, pineapple juice, and cornstarch. Stir until smooth.
- Bring to a boil, stirring constantly. Boil for 2 minutes, or until thickened.
- Remove from the heat and stir in the cooked meatballs.
- Serve over cooked white rice.
