Ingredients

  • 1 pound ground beef
  • 1 egg
  • 1/2 cup bread crumbs
  • 1/4 cup chopped onion
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons vinegar
  • 1/4 cup pineapple juice
  • 2 tablespoons cornstarch

Directions

  1. In a large bowl, combine the ground beef, egg, bread crumbs, onion, salt, and pepper. Mix well.
  2. Form the mixture into 1-inch meatballs and place on a greased baking sheet.
  3. Bake in a preheated 350°F oven for 20 minutes, or until cooked through.
  4. Meanwhile, in a medium saucepan, combine the ketchup, brown sugar, vinegar, pineapple juice, and cornstarch. Stir until smooth.
  5. Bring to a boil, stirring constantly. Boil for 2 minutes, or until thickened.
  6. Remove from the heat and stir in the cooked meatballs.
  7. Serve over cooked white rice.
