Ingredients
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeño pepper, seeded and minced
- 1 cucumber, diced
- 2 Roma tomatoes, diced
- 2 limes, juiced
- 1 orange, juiced
- 1/4 cup cilantro, finely chopped
- Salt and pepper, to taste
Directions
- In a large bowl, combine the red onion, bell peppers, jalapeño pepper, cucumber, and tomatoes.
- Add the lime and orange juice and stir to combine.
- Add the cilantro and season with salt and pepper, to taste.
- Stir to combine and let the ceviche sit for 10-15 minutes to allow the flavors to marry.
- Serve chilled or at room temperature.
