Ingredients

  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeño pepper, seeded and minced
  • 1 cucumber, diced
  • 2 Roma tomatoes, diced
  • 2 limes, juiced
  • 1 orange, juiced
  • 1/4 cup cilantro, finely chopped
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the red onion, bell peppers, jalapeño pepper, cucumber, and tomatoes.
  2. Add the lime and orange juice and stir to combine.
  3. Add the cilantro and season with salt and pepper, to taste.
  4. Stir to combine and let the ceviche sit for 10-15 minutes to allow the flavors to marry.
  5. Serve chilled or at room temperature.
