Ingredients

  • 2 heads of bok choy, washed and chopped into small pieces
  • 1 cup shredded carrots
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 2 tablespoons toasted sesame seeds
  • 1/4 cup olive oil
  • 2 tablespoons rice vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions

  1. In a large bowl, combine the bok choy, carrots, bell pepper, cilantro, and mint.
  2. In a small bowl, whisk together the olive oil, rice vinegar, honey, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Sprinkle the sesame seeds over the top and serve.
