Ingredients
- 1 onion, finely chopped
- 2 cloves of garlic, finely chopped
- 1 teaspoon of cumin
- 1 teaspoon of ground ginger
- 1 teaspoon of turmeric
- 2 tablespoons of tomato paste
- 1 teaspoon of paprika
- 3-4 cups of vegetable broth
- 1 can of chickpeas, drained and rinsed
- 1 cup of lentils, rinsed
- 3 tablespoons of fresh parsley, chopped
- 3 tablespoons of fresh cilantro, chopped
- 1/2 cup of lemon juice
- Salt and pepper to taste
Directions
- In a large pot, heat some olive oil over medium heat.
- Add the onion and garlic and sauté until the onion is softened.
- Add the cumin, ginger, turmeric, and tomato paste and cook for another minute or two.
- Add the vegetable broth, chickpeas, and lentils and bring to a simmer. Simmer for 15-20 minutes, or until the lentils are cooked through.
- Add the parsley, cilantro, lemon juice, salt, and pepper. Simmer for an additional 5 minutes.
- Serve hot with a side of crusty bread.
