Ingredients

  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 teaspoon of cumin
  • 1 teaspoon of ground ginger
  • 1 teaspoon of turmeric
  • 2 tablespoons of tomato paste
  • 1 teaspoon of paprika
  • 3-4 cups of vegetable broth
  • 1 can of chickpeas, drained and rinsed
  • 1 cup of lentils, rinsed
  • 3 tablespoons of fresh parsley, chopped
  • 3 tablespoons of fresh cilantro, chopped
  • 1/2 cup of lemon juice
  • Salt and pepper to taste

Directions

  1. In a large pot, heat some olive oil over medium heat.
  2. Add the onion and garlic and sauté until the onion is softened.
  3. Add the cumin, ginger, turmeric, and tomato paste and cook for another minute or two.
  4. Add the vegetable broth, chickpeas, and lentils and bring to a simmer. Simmer for 15-20 minutes, or until the lentils are cooked through.
  5. Add the parsley, cilantro, lemon juice, salt, and pepper. Simmer for an additional 5 minutes.
  6. Serve hot with a side of crusty bread.
