Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon chili powder
  • Salt and pepper, to taste
  • 2 cans (15-ounce) pinto beans, drained and rinsed
  • 1/4 cup chicken broth or water

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
  3. Stir in the cumin, paprika, chili powder, salt, and pepper and cook for an additional minute.
  4. Add the beans and broth and cook, stirring occasionally, for 10 minutes.
  5. Using a potato masher or the back of a wooden spoon, mash the beans until they reach your desired consistency.
  6. Serve warm.
