Ingredients
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon chili powder
- Salt and pepper, to taste
- 2 cans (15-ounce) pinto beans, drained and rinsed
- 1/4 cup chicken broth or water
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
- Stir in the cumin, paprika, chili powder, salt, and pepper and cook for an additional minute.
- Add the beans and broth and cook, stirring occasionally, for 10 minutes.
- Using a potato masher or the back of a wooden spoon, mash the beans until they reach your desired consistency.
- Serve warm.
